Most catering problems at functions are timing problems. The food is ready but the rasams run late, or the buffet opens while the couple is still on stage and half the hall is queuing in front of the photographer. Good food served at the wrong moment still feels like bad service.
We plan the menu with the caterer, then set the serving time against the running order: when the soup goes round, when the main buffet opens and when dessert and chai come out. What we don't do is put a caterer in a venue without checking the kitchen space, the power and the water first, especially at farmhouses.

A live BBQ with seekh kebab, chicken tikka, malai boti and fresh naan off the tandoor, set up where guests can see it. At farmhouse mehndis and winter nights, the smoke and the grill become part of the atmosphere.
Stations for chaat, gol gappay, jalebi, halwa puri, pasta or tikka, served fresh by a cook at each counter. Live stations keep guests moving and cut queues at the main buffet.
Sandwiches, samosas, rolls, cakes, mithai and chai or coffee for engagements, showers, birthdays and office events. Priced per head, delivered and served.
Plates, cutlery, glasses, chafing dishes and table linen, with uniformed waiters sized to your guest count. At home functions this saves the family from borrowing plates from every neighbour.
A kitchen tent with gas, water and lighting, placed away from guests but close enough to keep food hot. We also plan waste removal, which farmhouse owners always ask about.
